AUSSIE BEERS WITH IRISH CHARM
No fuss, no fancy names – just good beer
When we say ‘bitter’ we actually mean lager – like the old school Australian lagers that were called ‘bitters’ for decades.
Intentionally low hopped, clean and dry with subtle stone fruit, lemongrass and lime flavours with a gentle malt background.
Hops – Dr Rudi, El Doraldo & Cascade
SEASONAL BARREL AGED STOUTS
Using a base stout, we put this into an ex whiskey cask from Craft Works Distillery for a minimum of three months to age. This imparts its character of the barrel of spiciness and jammy fruit.
It is then hand-bottled and aged for a further three months before being hand waxed sealed, labelled and individually numbered. Small batched and limited to only 100 bottles.
Each is named in honour of the brewer’s homeland or family member. Previous releases have been a “The Billy Black Stout” Choc Cherry Stout, named for the birth of Brewer’s son.
Upcoming releases will include “Oh Davy Boy” Davidson Plum & Vanilla Stout, named for the Brewers Grandda, and “The Irish Traveller” Irish Coffee Stout, named for the travels the barrel and those from the Emerald Isle take.
IRISH RED ALE
Warming and lightly smoked, this ale was inspired by the brewers’ homeland, where traditional Irish Reds are shared in front of a roaring turf fire on a wet winters night.
Using Manuka smoked malt & presenting toffee notes and a burnished red appearance, this is the Emerald Isle in a glass.
Hops – East Kent Golding
Smooth, approachable and no fuss – just like those hailing from the Emerald Isle.
The big brother to the Bitter Ale, the Pale Ale was dry hopped using Equinox giving it a wee tropical-tinged treat that’s a glowing golden in colour, bursting with subtle pink grapefruit & mango.
Hops – Equinox, Cascade, Nugget

GUNDY’S MID STRENGTH BEER
Gundy likes a beer. In his younger days, he liked a full-strength beer, especially after a good day’s work.
You know Gundy – he works hard, bit of a larrikin and no nonsense. These days, he’s a little older and wiser. He still likes a good tasting beer, but he’s a little more responsible.
So Gundy’s daughter – his “Wee One” made a beer for him. Why brew beer if you can’t make one for your dad.
With notes of tangelo, passionfruit, citrus and pine this Mid Strength is wee on alcohol but big on taste. Straw in colour – fresh and refreshing
Hops – Waimea, Cascade, Galaxy, Citra and Warrior
MUDGEE HONEY GINGER BEER
Not your usual Ginger Beer, this has been made using native Cinnamon Myrtle, fresh Queensland ginger and golden bush honey from Mudgee, NSW.
Zingy, warming and refreshing – one to add to this summer favourite.

An Irish man walks into a bar… a classic start to every Irish joke. Only this time, said Irishman meets an Aussie and they fall in love. Owners Dave Henderson and Shiree Phillips met in Sydney a few moons ago and they bonded over their love of the amber ale.
In 2016, Dave bought a brewery in Orange off Gumtree Australia (without his wife knowing) to make homebrew in a shed in the backyard of their home in Bexley, Sydney, NSW. They embarked on making Aussie beer without bullshit with a touch of Irish Charm – just approachable & friendly, like those hailing from the Emerald Isle.
In their previous lives, Dave spent 22 years sailing the seven seas with the British Royal Navy and Royal Australian Navy as Petty Officer in Marine Engineer.
Shiree has spent the last 17 years in events, operations and marketing in fine dining hospitality, wine and universities including Quay Restaurant, UNSW Australia, Charles Darwin University and Colin Fassnidge’s pub group.
Dave hails from Derry, Northern Ireland and Shiree is from Mudgee, NSW. After living in Darwin, NT they now call Mudgee home.
